#11 Simple Carbonated Cider

Started July 27th 2025 by combining 6L of "President's Choice Fresh-Pressed Sweet Apple Cider" with a packet of Lalvin EC-1118 and covering with mesh cloth in open bucket. Starting SG was expected to be 1.041.
Expecting the following specifications after fermenting and adding 200mL of 3:1 xylitol/water mix by weight:
- pH: 3.60
- Total Acid: 5.5g/L
- Citric Acid: 0.1g/L
- Tartaric Acid: 0.3g/L
- Malic Acid: 4.6g/L
- Lactic Acid: 0.0g/L
- Alcohol: 5.23%
- Residual Sugar: 31g/L
- Final Volume: 6.2L
- Final SG: 1.012
- $/L: 3.37
SG 1.020 on July 29th.
SG 1.002 on July 31st. Racked into a 1 gal and 0.5 gal glass jugs. Heavily degassed. Added 1tsp of getin-based clearing powder.
Aug 9th: the cider is now almost crystal clear. Still slowly bubbling. The yeast layer has heavily compressed down to a height of about 1cm.
